This papaya based sauce has a nice mellow burn with tropical undertones.
Ingredients
1 papaya
1 hickory smoked Peach Bhut Jolokia (Peach Ghost Pepper)
1 small yellow onion
1/3 cup white vinegar
1 whole lime peeled
1 Tbs brown sugar
2 mdm garlic cloves
1/2 Tbs knowb of ginger
1/8 tsp allspice
salt

Put it all ingredients and blend till smooth.

Then bring to a boil then lowered to a simmer for 10 mins.

Add brown sugar at the end and zested the lime peel.

Pour boiling sauce into 5oz woozy bottles
