Papaya Smoked Peach Bhut Hot Sauce

This papaya based sauce has a nice mellow burn with tropical undertones.

Ingredients
  

  • 1 papaya
  • 1 hickory smoked Peach Bhut Jolokia (Peach Ghost Pepper)
  • 1 small yellow onion
  • 1/3 cup white vinegar
  • 1 whole lime peeled
  • 1 Tbs brown sugar
  • 2 mdm garlic cloves
  • 1/2 Tbs knowb of ginger
  • 1/8 tsp allspice
  • salt

Instructions
 

  • Put it all ingredients and blend till smooth.
  • Then bring to a boil then lowered to a simmer for 10 mins.
  • Add brown sugar at the end and zested the lime peel.
  • Pour boiling sauce into 5oz woozy bottles
