Papaya Smoked Peach Bhut Hot Sauce
This papaya based sauce has a nice mellow burn with tropical undertones.
- 1 papaya
- 1 hickory smoked Peach Bhut Jolokia (Peach Ghost Pepper)
- 1 small yellow onion
- 1/3 cup white vinegar
- 1 whole lime peeled
- 1 Tbs brown sugar
- 2 mdm garlic cloves
- 1/2 Tbs knowb of ginger
- 1/8 tsp allspice
- salt
Put it all ingredients and blend till smooth.
Then bring to a boil then lowered to a simmer for 10 mins.
Add brown sugar at the end and zested the lime peel.
Pour boiling sauce into 5oz woozy bottles
